When David and I were still long-haul truckers, we used to stop by Blossoming Lotus in Portland whenever we got a chance. Apart from serving our favourite raw pizza and gooood nachos, they also make a very yummy breakfast parfait. So, in a fit of nostalgia, I recreated something of the like at home. It’s not QUITE the same as the Blossoming Lotus version, but it IS delicious. I’ve also used almonds instead of cashews (mycotoxins!), and raisins & dates instead of agave syrup.

First, set aside 2 cups of buckies (sprouted, then dehydrated buckwheat) or 2 cups of gRAWnola. Now, let’s chop some fruit!

1 persimmon
2 golden kiwi fruit
1 apple
1 cup blueberries
2 pears
1 banana
2 oranges
2 medjool dates

Then we make the almond cream:

1 cup soaked almonds
pure water to desired consistency
3-4 big medjool dates (can be replaced with dried fruit such as sultanas, raisins or apricots)
¼ tsp vanilla

Put into a blender and whip up into a cream.

Now take 3 big glasses (or 4-6 that are not quite so huge… we used 3 fat mason jars ;-)), and begin layering: starting with some fruit, then buckies, then almond cream, again some fruit, more buckies, topped off with almond cream. Ta da! Done.
