Try this yummy carrot-top smoothie! Why? ‘Cause carrot tops are good for you, and this actually tastes nice too :-). They’re chock-full of vitamins, minerals and protein. Check out the Carrot Museum (we kid you not, there is such a thing) to learn a LOT more about carrots and their wonderful green.
The blackcurrants add a little tartness to the smoothie and oodles of flavour, besides being full of good things. Just to give you an idea, blackcurrants are significantly high in anthocyanins and have been found to potentially protect against cancer, aging, inflammation and neurological diseases. They have one of the highest antioxidant values in the fruit kingdom, are an excellent source of vitamins C & A and beta-carotene, and are high in vitamins B1, B5 and B6, and iron, potassium, magnesium, manganese, calcium, copper and phosphorus.
green tops of 5 carrots
1 c black currants, fresh or frozen
4 ripe bananas
2 trays of ice cubes
filtered/spring water to desired consistency
1/2 c sultanas, optional
1/2c almonds, optional
Blend until smooth. Enjoy! Makes plenty for 2 adults and one toddler.
